Arizona's Arrowhead Grill Offers Culinary Sophistication, Savory First Impression

Schwerd, who has spent the past two decades carving out a reputation as one of the Valley’s finest chefs, has brought his brand of steak and seafood to Glendale with Arrowhead Grill.

Schwerd’s passion for food left an indelible stamp on restaurants such as Mastro’s Steakhouse, Mastro’s Ocean Club and Drinkwater’s City Hall Steakhouse, where he was founding chef. It also helped him open John Elway’s Steakhouse in Denver, Colorado to great fanfare.

Now he’s using his experience and a fondness for top quality steaks to up the ante with Arrowhead Grill.

From the 16-ounce Steak Au Poivre to the 22-ounce Porterhouse, the hand-selected, alfalfa and corn fed beef provides the delicious focal point at Arrowhead Grill. Each steak is carefully chosen and artfully cooked, delivered to the table in a sizzling 200-degree skillet that seals in the juices while you enjoy steak perfection.

The house specialty is a nod to the past, a 10-ounce sirloin steak dubbed the Delmonico after Chef Charles Ranhofer’s signature steak at the Delmonico Hotel in lower Manhattan more than 100 years ago.

According to Schwerd, the steak is prepared to the exact specifications of Ranhofer, culled from a culinary classic the chef penned a century ago, The Epicurean.

“There was a great deal of confusion and mystery that surrounded Ranhofer’s Delmonico steak,” Schwerd said. “For years, patrons had asked me to cook a Delmonico steak for them but there was never a general consensus on how to do it. I finally discovered an original copy of The Epicurean, scoured the pages for the recipe and decided to incorporate it into our menu at Arrowhead Grill.”

Steaks aren’t the only culinary specialty at Arrowhead Grill. Schwerd’s seafood dishes are just as impressive and his sides – items like Sautéed Hominy with Bacon, Chipotle Macaroni & Cheese and Lobster Twice-Baked Potato – will leave even the most seasoned diner speechless.
