The Delmonico is a 10-ounce sirloin steak that draws its inspiration from the original recipe first served by Chef Charles Ranhofer at the famed Delmonico Hotel in lower Manhattan.

According to Arrowhead Grill Chef and Owner Charles Schwerd, chefs for years disagreed about how to prepare the original Delmonico steak.

Schwerd decided to do his own research and came across the original recipe in The Epicurean, a complete book on the culinary arts written by Ranhofer. Arrowhead grill’s steak is based on that recipe.

“When someone comes in and orders a Delmonico from us, they’re doing more than ordering a quality steak, they’re stepping back in time,” Schwerd said.
