Chef McLaughlin honed his skills in the art of classical French cookery in the Culinary Arts Program at Le Cordon Bleu, Scottsdale, Arizona. Out of school, McLaughlin began to develop his own personal cooking style. From fond memories of growing up with fresh, natural ingredients, McLaughlin incorporated herbs that were picked directly from his garden, rinsed and placed on the customerâs plate. In 2003 with his name a buzz in the restaurant industry, Chef McLaughlin accepted a job at the Chase Park Plaza in St. Louis, Missouri overseeing the CafÃ© Eau.
McLaughlin established himself as a âchef to be reckoned withâ when he was recruited to open Red Moon Restaurant. During that time he served as an Executive Sous Chef, Executive Chef and General Manager while the restaurant was named âNationâs Top 100 Asian Restaurants 2005â in Food & Wine Magazine and âTop Restaurants in Americaâ in the Zagat Survey 3 years in a row, in addition to features in the New York Times and Boston Globe. In 2007, the Adamâs Mark Hotel in St. Louis received the AAA Four Diamond Award with Chef McLaughlin serving as the Chef De Cuisine. Also in St Louis, McLaughlin successfully opened Jim Edmondâs Fifteen, St Louisâ first urban steakhouse.
In 2008, McLaughlin made the move to Dallas to work for Food, Friends and Company. Recognizing a need for good food to get back in peopleâs homes or venue of choice, McLaughlin made the bold step out of the restaurants to start Clean Plate Catering.
âFrom the moment I arrived in Dallas, I knew this city appreciated good food and was serious about going out to eat. I couldnât drive 25 feet without seeing another restaurant and I couldnât walk around the corner without hearing someone talking about what restaurant they went to last night. So, I initially considered opening my own restaurant in Dallas, but then I recognized a need for people to be able to enjoy delicious food and good company in places besides restaurants. Why donât I go to them? I can offer people that personal chef restaurant quality experience right inside their homes,â said Chef McLaughlin.
