Chef Dave Caron, a Kalispell, Montana native, explains. "When researching the existing grill mat products we made some rather surprising discoveries. The new video series is in four parts and covers everything a consumer would need to know when purchasing a nonstick grill mat. Caron explains claims are being made online that a new style of nonstick grill mat has been invented and manufactured that outperforms all other mats on the market by being usable at high heats up to 600 degrees Fahrenheit.
According to Caron, "That's really impossible since all the mats are made from exactly the same materials, and FDA regulations have set the top temperature for their use with food at 500 degrees Fahrenheit. In fact, it's actually something of a dangerous claim to make since nonstick cookware begins to off-gas at temperatures above 500. Every experienced Chef and home cooking enthusiast knows to never use high heat on nonstick cookware. Nothing has changed there."
All nonstick cookware, which includes the BBQ grill mat, is made from a substance created by DuPont Corporation and is usually referred to by the trademark, Teflon. The chemical nomenclature for Teflon is polytetrafluoroethylene, and its rather long chemical name is often shortened to a more easily remembered term, PTFE. At low and medium temperatures (up to 500 degrees, as mentioned above) PTFE is stable and impervious to almost all other substances, including harsh chemicals. PTFE is truly remarkable; It has the lowest coefficient of friction of any known solid on the planet, which in layman's terms simply means it's the most slippery thing ever invented; In mat form, it can be cut with scissors or blades to any shape or size; and it is completely resistant to acids, alcohols, oils and water.
